Breakfast donuts (5am)

So, Dexter has been rising at around 5am most days. When I’m not at work it gives me a bit of time to be creative in the kitchen as he is usually quite happy playing by himself for a while at that time. He plays on the floor in the kitchen or spends a bit of time in his walker while I get stuff done.

So this morning I had a bash at making breakfast donuts. How often does a recipe work first time? This one was ace!



100g plain flour

1tsp baking powder

1 egg

120ml milk (I used coconut alpro)

1 tsp oil (I used a heaped tsp of coconut oil)

2 tsp date syrup (or another natural sweeter – sweeten to taste; I don’t put much in as my baby is still very young)

Splash of vanilla extract

Mix wet into dry. Fill your donut pan almost completely and cook for around 10 minutes, or until raised and puffed.


I served these with Greek yoghurt – but the possibilities are endless. We all had a few for brekkie and they were spot on!
