A leftovers dish I created during naptime! Mondays are my exercise evening, so we all eat at different times. We all had this over jacket potatoes and Mr FMM had it the next day in a wrap!
Simple list of ingredients as follows:
– 1 chicken breast, chopped (or leftovers equivalent from a roast chicken)
– 5-7 chunks of frozen mango (or fresh should you have it) finely chopped
– 2 tbsps plain yoghurt (I used low fat Greek but insert your own preference here)
– 1/2 tbsp mayo (optional)
– 1tsp mild curry powder
– 1/2 tsp pepper
– 1 tbsp lemon juice
– Pinch cumin
I also added chilli flakes for the grown ups.
1. Cook your chicken if needed
2. Mix everything in a bowl
3. Refrigerate for an hour
This is really easy to double, or even triple up and would be a good choice for feeding a crowd.
