peanut butter and jelly puffed rice treats

I made these little treats in a matter of minutes. They contain no added sugar, are gluten free, dairy-free and vegan. They are made from puffed brown rice, nut butter and berries. Four ingredients, a fridge and an hour and you have these little beauties. These bite-sized  heart treats are perfect for lunchboxes or as a yummy toddler snack. I made these with a heart shaped ice cube tray to make them extra cute – but they would work equally well in a tin or ramekin and cut into squares – just make sure you line it first.

Ingredients – makes around 12 in an ice cube tray

1/2 cup puffed brown rice

1/4 cup peanut butter

1/4 cup red berries (I used strawberries but raspberries would be just as good)

1/2 tsp vanilla extract


In a pan, cook your berries on low heat until they are completely broken down. Then. take them off the heat.

Stir in your vanilla and nut butter.

Add your rice puffs and mix until combined.

Quickly transfer to your ice cube tray or ramekin, pushing and packing the mixture down as far as you can.

Refrigerate for about an hour.

A quick and simple treat that would be perfect for a party snack or a valentine’s lunch – which is where mine ended up! I’d keep these in the fridge for up to a week so you can 100% make these ahead of time too.
